I love this healing ginger miso soup. Miso is alkalizing (not to mention all the veggies )and does wonders for digestion, ginger soothes an upset stomach. I also slipped in a little kombu to mineralize the broth. Both of these ingredients can be found at your local health food store or Whole Foods. All this took no more than a 1/2 hr. This recipe is perfect for when you have had too much sugar, refined carbs or are just not feeling well.
2 large hunks of ginger
4 cloves of garlic, made in to a paste (smash with your knife)
4 cups of water
1/2 of a leek, chopped
1/2 of a carrot, large dice
3 tbsp of chickpea miso
splash of braggs (1-2 tsp)
1/2 inch piece of kombu
2-3 leaves of kale, chopped
In a pot bring the water and veggies (except kale)to a boil. Let simmer for 20 minutes. Take out a 1/2 cup of the broth and mix the miso in. Stir it up and then add back to the broth. Be sure not to boil the miso. Add the kale at the end. Season with the braggs.
