Mushroom Gravy


Tying to have a plant-based Thanksgiving but can't imagine giving up some of the comfort foods. Try this easy to make mushroom gravy.


6-7 cremini mushrooms, small dice

1 cup of veggie stock

1/4 onion, fine dice

1 clove garlic, minced

2 tbsp of earth balance or butter

2 tbsp of flour


Chop your veggies. Sauté in 1 tbsp olive oil. Add veggie broth. In a side pan heat the butter or earth balance till melted and add flour. Cook for a few mins then add to the veggies and broth. Cook down till it is nice and thick. If you like it thicker add more flour and butter mix. Season with salt and pepper. I love no chicken “chicken bouillon” instead of the veggie broth. I use that with water and it is quick and delicious.


Add this on top of your mashed potatoes this year or it goes great on some hot biscuits.
